Honeyed Beets

Oh my goodness, I got out my Betty Crocker cookbook to figure out what to do with the beets that I've grown in my garden and the following recipe is what I found...MmMmMmmmmm these are so good!

5 fresh medium beets (or 2 16 oz cans)
1 medium onion chopped
2 T. butter
2 T. honey
1 T. lemon juice
1/2 tsp. salt
1/8 tsp. cinnamon
1 T. snipped parsley

To prepare fresh beets
Cut all but 2 inches of tops off. Boil enough water to cover beets. Add beats and simmer 50 minutes. run under cold water. Cut off tops and roots and remove skin.

Prepare beets (or open cans). Cut into shoestrings. Cook onion in butter until tender. Add remaining ingredients--stir occsionally until heated. Sprinkle with parsley.

  1. We dug the end of the beets last week and they have been just sitting in the frig. I can't stand beets but I will try your recipe for my hubby. Beet hating started when I was pg with my 2nd. My hubby was so excited that someone had given him some beets. But my morning sickness and the the smell was more than I could take and I spent more time in the bathroom than at the kitchen stove.
